Easy Pasta dishes

A bowl of pasta is always comforting and usually pretty cheap. Grab yourself a fork and some sort of binge-worthy Netflix series and you're good to go.

Lentil Bolognese

This first one is a great replacement if you are a fan of traditional spaghetti bolognese! Make a classic Italian tomato sauce with onions, garlic, tomatoes and some herbs and boil puy lentils in veggie stock. Combine the cooked lentils with the tomato sauce and serve over spaghetti for a heartwarming and filling dinner.

Pesto

Pesto pasta is a classic and a favourite amongst students. This is a super lazy meal that requires very little effort and very little time. All I did was grab a jar of Tesco's 'Free From' pesto to dodge the dairy that resides in most standard pre-made pestos and stirred it through some pasta with sweetcorn and black olives before lashing it with Sriracha because who doesn't love that shit.

Sun-dried tomato

If you can chop fast then you can do this one in the time it takes for the pasta to cook. Put the pasta on to boil and throw into a separate pan; sun-dried tomatoes plus some of the oil from the jar , a sliced red pepper, a tablespoon of tomato puree, a diced red onion, sliced garlic some mixed herbs and a pinch of salt and pepper. You can do it with or without the broccoli depending on what you have in. Olives give a nice salty kick but I didn't have any that day so went without and it was still delicious. Once the pasta is done, strain it and stir through the sauce, chuck the whole thing into a bowl and you're done. You can even eat it straight out of the pan if you want to save washing up...
